Mop ‘N Glo Casserole

1/2 onion, sauteed
1 lb chicken or chicken substitute
1 can cream of chicken soup
6 oz sour cream or Greek yogurt
1 C chicken broth
1 C rice, cooked
1/4t celery salt
1/8t onion powder
1/4 t garlic powder
salt and pepper to taste
1C Ritz crackers, crushed
1/4C butter, melted

Mix all ingredients, except crackers and butter. Scoop into small casserole dish. Mix crackers and butter in quart-sized baggie. Top casserole with crackers. Bake at 350 for 30-35 minutes. Allow to cool for 10 minutes. Carry dish to table with thin towel. Before arriving at table, flinch from burning sensation in fingers, and allow dish to slip from the towel and land upside-down on floor. Salvage top layer. Serve with sheepish smile and a large salad.
